The nikkei food is the fusion between Peruvian and Japanese gastronomy and the main protagonists of this fusion are the makis.

Chifa

We can not speak about the Peruvian food without name the chifas, another example about the influence of foreign gastronomy in the Peruvian cuisine. The chifas are one of the favourite places for Peruvian to eat daily. What to order in this type of restaurant? The basics are rice chaufa, dim sum or tallarín saltado.

Jungle food

The jungle cuisine is, perhaps, the least common in Lima, but luckily there are very good restaurants where you can get to know the best of the Peruvian jungle gastronomy. One of them is Ámaz, from chef Pedro Miguel Schiaffino, located in the district of Miraflores.

Paiche, tacacho de cecina, patacones, juanes… the good thing about the food of the jungle is that they are unique and it has little-known dishes for foreigners, so it is perfect for those who like to experiment while eating.
